We'll share an exciting update on our cacao preservation project and provide an experiential educational program. Chloé Doutre-Roussel, owner Chloe Chocolat and author of The Chocolate Connoisseur, will share her experiences and the emerging trends from Brazil (a country that until just recently struggled with chocolate production after almost all their crops perished to disease). Three unique chocolates from Bahia will be presented in a tasting with four variations: nib to bar to oil-based ganache and water-based ganache.
The audience is encouraged to tweet questions before and during the event. In addition to discussing how the artisanal process can affect the flavor profile, we’ll learn how water activity in recipe development impacts flavor and texture.
